When you start a game against the CPU, use the doubling cube (by pressing X) on your first move. The CPU won't quit, and will continue the game. Just win the game and you'll earn the Achievement. If you're playing a single-round game, the doubling cube really has no impact, so there's no point in not accepting the doubling wager.
