An instant block is when you press back on the control stick the second you are hit. You'll know when you did it because your character will flash white and you'll get some heat for your troubles.

The easiest way to get the achievement is to go into versus mode with two controllers, pick Lambda on the second controller and whoever you want on the first. When the match starts spam Lambda's 5C attack (the one where she shoots the little swords on her back) and mash backwards on the joystick with the first controller.

Do it 20 times and the achievement is yours.
