I just got this achievement after many long (and frustrating) games with a pretty bad AI. Then i discovered you can get this by setting the number of players to 2. Play conservatively and don't bet if the AI raises (it never bluffs) and as the blinds get bigger, it will keep folding until it runs out of money.
