Remember to change setting back to default first.

- go to my corner on the main menu
- select setting's
- press Y and confirm by selecting YES

Now return to the menu and select "Fight now"

Select your boxer

Then choose to fight against "manny pacquiao" you will find him in the lightweight class.

Simply beat him and the achievement will unlock at the end of the fight.

NOTE- THIS IS ALSO POSSIBLE WITH A SECOND CONTROLLER/PAD
