Firstly, the challenges are accessed from the main menu, under "Challenges." The easiest 3-star challenge is "Parkour This". It is quite easy to do, but you can view the link video for more information.

Info prior to watching: You will then need to choose a light class character (From character customization menu: Body type).Then you need to go to the challenge menu. Beat Parkour This 1-Star and Parkour This 2-star to unlock Parkour This 3-star. Watch the video for the exact schematics but the basic plan is to work you way from left to right relative to the spawn. Escort Duty is a good alternative method but I found Parkour This to be the easiest 3-star challenge.
