Make sure when you set up your dynasty to make a created coach and set his alma mater to whatever school you're going to take control of and have the contracts on. Play through the dynasty like normal and when you make it to the National Championship as #1 or 2 in the country and win the achieve will unlock, make sure you play the National Championship game or at least super sim in it until the end of the game and play the last minute or so just to be safe.
