For this achievement, you need to beat 2-3 without getting hit while controlling the boat. So you need to avoid every mines and boats in your way to the end of the level.
My only tip would be to take it easy and slow, do not move your arm too fast and keep in mind the small delay between you and the game. So anticipate your move and dont give up! :)

The entire bit will last about three minutes, and you cannot hit a single mine, rock, or boat.
Be patient and steady with your arm movements and anticipate your next move. The Kinect has a little lag, so lift your arm up to jump slightly earlier than you might normally.
