In order to gain access to Hardcore difficulty you first have to beat Career Mode on Average Joe difficulty first. In Hardcore difficulty your attacks do less damage, your opponents attacks do more damage, and the time window for attacking/dodging/blocking is smaller. With this in mind, this mode is still relatively easy.

Note: The only event that gave me some trouble was Trade Blows. Unlike Average Joe difficulty where you can just throw a flurry of punches and knock your opponent out, you actually have to block/dodge your opponents strikes and counter with strikes of your own. Hope this helps.
