For this achievement you simply have to complete every exercise routine/class under every type of workout (the red sort in the main menu).

There are 9 types of workout: (This list has been taken Euler13's guides to the Meritorious and Solid Gold).
Abs (13)
Cardio (10)
Arms (12)
Toning (9) - one requires 30 Uplay points to unlock
Back (12)
Health [Humana] (3)
Legs (12) - one requires 20 Uplay points to unlock
Sports Preparation (8) - one requires 40 Uplay points to unlock
Glutes (12)

The numbers in brackets indicate how many sessions are under each exercise workout. And Uplay points are earned naturally through playing the game.

Have fun working out. I personally are going for this achievement at the moment of writing this, I am currently doing every exercise up to 20 minutes long myself, and then unless I want to, I get a chair for the longer ones. :)
