Game Mode: Quick Race
Difficulty = Easy
# of Laps = 3
Race Track = Daytona International Speedway Oval Track
Driver = Doesn't matter.

The Show-Off achievement requires that you do a donut and go on to win a race.

In order to do a Donut press and hold Left Stick Up + Right trigger (Accelerate) + X Button (Drift) as you are driving towards a wall or grass.

Do this round and round a few times, and when you stop it will say donut on the bottom right hand side of the screen. Just finish race in first and you'll pop the achievement.
