Select Cabela's Cup (as not all of the events are available straight away in Free Play) and then choose to play Archery 2 or 4. Wait until a moving deer target shows up and hit it with an arrow. You may need to read the on-screen instructions before the game starts if you don't know how to load up and fire.

It's easier to hit the ones in the forground rather than the ones at the back, not only because they're bigger but also you won't have to adjust your aim quite so much to allow for travel.

To make it even easier, you can shoot a wolf target, if there is one, as this will temporarily stop the deer from moving and you'll still get the achievement.
