You need to gold the 6 racing activities which are: -

Biking 1
Biking 2
Kayaking 1
Kayaking 2
Wave Riding 1
Pole Dancing

Sorry, did I say Pole Dancing? I meant Wave Riding 2

You'll need a score of 750 or more to secure a gold. I found it easier to take my time and make sure i got lots of the collectables including the boxes and jewels (50 points) and also do the ramps as they'll sometimes give you poses to do which are worth 125 points. You can get a decent time bonus if you finish quickly but I found you didn't collect enough if you rushed it. (The best time bonus I saw was 200.) Once you get the hang of the controls you get these in no time.
