In order to parry, you must have a shield equipped. Hit the left trigger to block as an enemy is about to attack you, right before the attack lands. If you time it right, you'll see a slight slowdown as your character blocks the attack and pushes the enemy back slightly. Do this 100 times over the course of the game and you'll unlock the achievement.

Following on from ArcAngel017's suggestion, (I also never really bother with my shield) I found wolves were the easiest to parry as they have a very obvious pattern of attack, so pretty easy to get a rhythm going. As suggested, go back to one of the starter areas and run this - you can get quite a few parries out of a couple of wolves so this shouldn't take long to do. there's also plenty of wolves around ettinmere, kill the ettin and just run up the parry count on the wolves they normally have with them. (especially the shamans)

If you are like me and have barely touched the left trigger, there is a very easy way to get this. I was level 15 and realized I hadn't parried a single time, so I went back to Odarath (the starting area) and just ran around to each group of enemies while parrying every attack. They barely do any damage by this point, so you don't need to worry about dying. I was using a talisman that did damage when I parried, so I had to run around the area finding more enemies, but the whole process only took about 15 minutes.
