You only have to do one track (PAC-MAN forest is easy enough on the PAC-MAN cup) and be in first place on all 3 laps. Taking the shortcut is a big huge help as well as using the boost on the track and the shortcut is easy to spot on the PAC-MAN forest track to your left when the road turns right.
