After watching the video carefully I discovered the key was to hold just LT whilst it was loading, then once you start moving and have jumped the first crates, hold down RT aswell. This will ensure you get a good start.
Par time is 2.20 so you need to get 2.19.
I got 2.20 about 7-8 times, if you can get 2.20 just keep at it. After I tried the start tips I gave above, I got it first time.
