There are 3 challenges per Grand Prix track (and no challenge for Extreme), for a total of 54 challenges. Challenges for each track are unlocked after you complete the track once, so you'll have all challenges available after you complete your first GP playthrough on rookie. I'd suggest trying to do the challenges AFTER you learn to be good at the game, e.g., by first completing a GP on Champion or Legend difficulty. That way, you will know how to shave off precious seconds in corners, learn how to break-turn-accelerate in corners, etc. The rewards for completing challenges are great (1 rider point per gold medal), so you might want to try your luck soon after you feel you have mastered the basics of bike racing. There are 3 (stackable) achievements tied to challenges, for completing all challenges at bronze, silver and gold difficulty. I'd suggest you go for gold every time, so you don't have to do them all 3 times.

Each track has the same 3 requirements : Time, Speed and Follow the Leader.

For time, you will have to master a short section of the track, usually a few hard corners. Practice makes perfect, and most of them are easy after you learn what you have to do.

Speed can be difficult. Challenges usually ask you to take a PERFECT corner to cross the line with the required speed. Again, not much to say except practice, practice, practice. Don't forget that your bike tires can't efficiently break and turn at the same time. So try braking, THEN turning while accelerating to go faster in turns.

Follow the Leader is the easiest, and requires you to beat 1 racer on a complete lap. If you have difficulty (or want to have a lot of fun), try taking him down in the first corner. The CPU usually takes more time than you to get back on the track after a crash, often giving you 3-4 seconds ahead.
