Relatively easy to do. Just freeze an enemy, then hit him with the air grabber's melee attack (Y). If you upgrade Old Man Winter you can both extend how long an enemy is frozen and how large the area of effect is. Should only take one melee strike to shatter an enemy.
You can't miss getting Old man winter as it is story related.
