Simply start your franchise. I used the Red Sox, i made several forced trades with the computer for allstars. I played my 20 1-inning games. Saved, this will allow you sim multiple times for your franchise achievements.

For Layer Cake i just demoted my allstars to AAA, AA, and A on the same day. Won all three 1-inning games and bingo Achievement unlocked.
