I found a easy way to get this if you have 2 controllers.

Step 1: Set up a game via quick play (can't be done online or on season mode)

Step 2: At the coin toss use your 2nd controller to receive to the kick off. Kick the ball to that team using controller 1. When you catch the ball using controller 2 press left or right on the directional pad and you should fumble the ball (try to do it in the end zone or near the goaline). Pick it up with controller 1 and if your return it for a TD you will get the achievement I am not sure it it pops at the end of the game or after the point after touchdown (PAT)
