The day rolls over at 06:00, and the game starts at 06:00 on Day 1, so the achievement should unlock when you reach 06:00 on Day 8. If I'm wrong about that, post a correction to the comments and I'll fix it.

A day in Sheltered passes in about 4 minutes and 10 seconds of real-world time, so surviving 7 days will take just under 30 minutes. Fast-forwarding with the right trigger speeds up time by about 6x.

At the absolute minimum, you will have to cycle through each of your family members with LB or RB and put them on automatic control by pressing the left stick, so that they will use the food and water that come with the shelter. You will also have to send someone topside to fix the oxygen filter when it breaks down. If anyone gets radiation sickness, send them to the medicine cabinet for anti-rad pills. Do that, and you can just hold down the right trigger and fast-forward your way to the achievement in not much more than five minutes. Your family will be starving, sick, stressed out, covered in vomit and feces, and praying for the sweet release of death, but you will have your achievement.

That's bare minimum. A better way to do it would be to put everyone on auto-pilot, then build a bed or two, a shower, and a toilet, keep fuel in the generator, fix things that break (or before they break), and find some food. For food, you should send someone out to some of the nearby buildings (be sure to equip a gas mask). You could also trade with people who come to your shelter door. Another way to get food early on is to build a snare trap and catch the critters that roam above your shelter. This will let you harvest meat from them. Put on the hazmat suit before building the trap and before harvesting your catch. Keep in mind that to live off of meat, you will need a freezer, and it is highly recommended that you build a stove, because raw meat and food poisoning go hand-in-hand. Use the anti-rad pills the shelter comes stocked with if anyone gets radiation sickness. Last but not least, craft a mop and bucket and use it every day to keep the vermin away. If you do all of these things, your family will reach the one-week mark relatively happy and healthy and ready to stay in the shelter for a good long time.
