You cannot sim games to get this achievement. You must get all 302 strikeouts yourself, all with the same pitcher, all in a single season.

You will need to play a full 162 game season to have enough games to get this done. Each of your starters will get around 32 starts over the course of a full season so you need to average 9-10 strikeouts per start for the entire season to get enough for the achievement. I was usually getting 10-12 so once you get used to it 9-10 shouldn't be a problem.

The most consistent way I've found to get strikeouts is to set the CPU Difficulty to Easy and use a pitcher with a high Drop rating and a high Stamina rating and always hold up when you pitch, which will throw a slow pitch that will hopefully drop in the dirt before it gets to the plate. Keep the pitch over the plate but try to move it to the edges of the plate. The CPU will swing and miss most of the time if it's over the plate and drops. Sometimes the pitch will not drop and they will put it in play. That's ok, just keep trying batter after batter until your pitcher gets tired and starts flashing red, usually in the 5th or 6th inning. You can usually squeak out 1 or 2 more strikeouts once they go red, but the pitches will drop in the dirt much less often so once it stops dropping at all then just put in another pitcher and finish the game.

If you're only going for this achievement and not the steals/HR/RBI season achievements, then you can use cn_X to sim the 4 games in between your main pitcher's starts until it's your strikeout pitcher's turn again and you'll only have to play the 32 starts for the one pitcher. If you're going for the other achievements as well all in one season, I would recommend playing every game until you have the 40 steals, 48 HR, and 131 RBI out of the way and then start simming the 4 starts in between your strikeout pitcher's starts. It took me about 85 games to get the other three (the steals and home runs will come sooner but the RBIs take a while) and that was also more than 50% of the season toward the Movin On achievement. Then I simmed the in-between games until I got the rest of the strikeouts. Then you can just sim to the end of the season and you should get the Movin On achievement as well if you won enough games.

A good player to use for this achievement is R.A. Dickey on the Toronto Blue Jays. The Blue Jays also have good players for the steals (Kevin Pillar) and HR and RBIs (Jose Bautista and/or Josh Donaldson), so that would be the team I recommend using for all of the season stats achievements as you can get them all in one 162 game season.

Credit to UnbeatenDJChris for suggesting Dickey. He also suggested Marcus Stroman, also on the Blue Jays, was good for getting strikeouts but I had trouble getting strikeouts with him because his pitches don't drop as consistently and you only have to do it with one pitcher. Feel free to experiment with other pitchers if you have trouble getting consistent strikeouts with Dickey or Stroman or if you don't like the Blue Jays. The high Stamina and high Drop rating are the key. Credit goes to BurningICE B for this tip.
