Okay, so I usually disagree with posting solutions when there are more than two, but this Achievement is so irritating that I felt like putting one in now that I have officially gotten this Achievement.
This is a post from xbox360achievements.org from two years ago. I followed this exactly and voila! Achievement unlocked.

i tried for the most part of an hour trying to do this by destroying the background and then by accident i unlocked it
it's quite simple and will probably make people feel as dumb as i did when i got it
simply destroy the environment at any point at the match and then when your opponent has next to no health use aura spark and use the pursuit technique(press left trigger while they are unguarded)
the pursuit attack will send them flying in the air and then back down to the ground in the process of killing them and this will unlock the achievement
i did this in versus with vegeta vs. broly my stats stacked and the opponent at full health, zero attack, zero defence and level 1

So basically, as Vegeta, don't attack Brolly until you have full Ki, and then unleash Final Flash. From there, use Aura Spark (LB) and then (LT) to initiate a pursuit attack. Vegeta and Brolly will end up in space. Now just attack Brolly until he dies.
The Achievemet popped within five seconds of the end of the battle. It appears that you must change AND destroy the background for this to work. Destroy with Final Flash, and then change with pursuit attack. |

I've got it today. This is what I did.
Play as Vegeta.
Select other character.
Stage -> Planet Namek.
Do the attack where You must mash the buttons and the fight continues high in the sky. Then simply kill Your opponent with Vegeta's Ultimate attack so the loser will fall down into a new stage and the achievement is Yours. |

| I got this achievement doing the Tien vs. Semi-perfect Cell fight in Z Cronicles. I put the game on very easy, and either got him down about 1 health bar left (can't remember if it was slightly above or below), then stunned him with Solar Flare and used the Neo Tri-Beam. If all three hit then the background will be destroyed, and if he has about one health bar then the third blast should also defeat Cell. If he survives the blast or the second hit defeats him just tweak his health, using light punches to get it about where you want it. |

I have earned this on Very Hard difficulty in Z Chronicles.
Personally, I went to Frieza Saga 01. "Ginyu Assault".
During the battle, enter into Aura Spark, with the Left Bumper, when Vegeta has a full KI Gauge.
Move towards Recoome and pull the Left Trigger to enter into a Pursuit Attack where you must push the buttons constantly.
Upon the successful completion of the Pursuit Attack, the battle should now be in the sky above the surface of Planet Namek.
Continue the battle until Recoome is into his final bar of health.
Enter into the Aura Spark, with the Left Bumper, once again and then press Up and the B Button to perform a Final Flash to defeat him.
Once he is defeated, he will be seen flying towards the surface of Planet Namek and the achievement should unlock. |
