The easiest level to do this on is probably Escape the Mines; the fifth chapter of the Temple of Doom storyline.

This mission only have enemies in the very first room, so if you're unlucky, it's easy to start over. The rest of the mission is only about riding the mine cart through two sets of checkpoints, with no perils whatsoever.
