I would recommend completing the hardcore or WWE tag title line ASAP, to unlock the tables match. Then use that...ALL the time. You're guaranteed 4 stars damn near every time, and it makes the matches short (unless you're actually wanting to improve your wrestler, then don't do it). The only matches that WON'T be tables matches will be the number 1 contenders.

And for me, at least, I found running grapples to be VERY useful.

Once you start the World Heavyweight and WWE championships, the cpu gets counter and reversal happy. Don't give up!
