Mahalo.com has a really good walkthrough for the entire game that also has a section on light seeds for each area. It can be found here: http://www.mahalo.com/prince-of-persia-xbox-360-walkthrough

Just hit ctrl+f to search for the area you are in followed by ': Light Seeds'. So for example the Sun Temple would be 'The Sun Temple: Light Seeds' without the apostrophe's. The locations of all 1001 light seeds can be found at that link.

As has been said, they aren't all required to complete the game but the guide up there will help if you're stuck and are trying to get the achievements for the light seeds.
