If you time your slash at a jumping enemy just right you will cut off his foot.
There is so much dismemberment in this game, it's almost inevitable that you'll get it just from playing through a level or two. It's one of the first ones that popped for me. |

Use Perfect Slice (LT) and hold down on the thumbstick and aim for the enemies foot.
Very simple and your more than likely to get this by accident on the first section. |
