If you had trouble with this like I did, especially passing the other riders and maintaining a lead, this is what I did:

First, have Jump start - On and Real rules - Off. Other settings (Main Menu - Options - Realism Settings) I recommend are:
Help on start - On
Aided Brake - On
Powered Brake - 250
Joint Brake - On
Traction Control - Full
Realistic Inertia - Off
Out of track help - On
Man. rider weight - Off
Rider health - Off
Motorbike damage - Off
Tyre wear - Off
Warm up lap - Off
Automatic gears - your preference, I have them On.

To get all cards for the Gambler achievement, one task you need is to complete a championship with every team. Don't forget to set the race for just 1 lap. For those, it's easy to have the opponents skill set at Rookie, and just going straight to Race 1, bypassing all the practice and qualifying runs. You start in position 22 (out of 22), but you can pass all the other riders before the race starts without penalty (with Real Rules off), and then it's pretty easy to maintain a lead. If you get knocked off while passing them, just restart the race.

NOW. To win a championship with opponents set to Real. I found that it's much harder to pass everyone and maintain a lead - kind of obvious, I suppose. So what I did here was complete the qualifying runs and tried to be near the top, but I don't think it's crucial. You do want to be at or near the top (at least in the front row) for the Superpole.

When you're ready to do Race 1, skip the preliminary cutscenes and as soon as you have control, take off. Starting in the front row, this will give you a sizable lead to start off with, then you just need to complete an average lap without falling down, and you should win the race. Complete Race 2 the same way, then rinse and repeat the entire process for the other 11 tracks. Good luck, and let me know if you have any feedback, as this is my first guide.
