There's an even easier way:

- Track: first US race (Duluth)
- Sled: any, I used the second upgrade

Select the track in the menu, but don't press A to start the race yet. Instead, press X and set both laps and opponents to 1. That way, you only need to speed away from the single opponent and only need to make one quick lap around the course to unlock this achievement.

I did one upgrade for each section of the sled and got this. I used the first track you have access to in the United States. It's fairly flat and minimal turns. Just get a good jump off the start line and you should be able to stay in front the whole race.
