You don't just need to collide, you actually need to crash into trees (causing you to respawn). I did this on the Air Masters Canada course, where there are no opponents and lots of easily accessible trees. Just drive towards one and press A just before impact.

collide with 3 trees in a race (not achievable in splitscreen)


you can also get this in a test drive (may have to trick into each trees though)
