My general recommendations for completing the game on Simulator:

First, and foremost, learn how to fly the plane. For many of these missions, you'll spend a lot of time just trying to get into position to shoot enemies, so learn how to use trim (A button), the throttle, and the rudder (both on the R analog stick).

Second, absolutely spam the wingman instructions (D-pad). For cover missions, press 'up' to have them attack all nearby enemies. For air attack missions (where your targets are planes) press 'right' to have them attack the targets. For ground attack missions (where your targets are tanks, AA batteries, buildings, etc.) press 'left' to have them provide cover for you. If your wingmen get too far away from you, press 'down' to have them return to formation.

Third, fly low and slow on ground attack missions. You will need to see and bomb with few visual cues, so it will take a lot of time just to figure out where you need to drop bombs or shoot rockets. I strongly recommend playing with unlimited fuel, ammo, and planes -- this will allow you to literally crash your plane next to (or on) the target to provide a more obvious target to aim for (fire and smoke rather than a tiny tank). You can also suicide bomb and rocket (fly straight at the target and attack at the last moment).

Once I got the hang of flying and directing my wingmen, only one mission gave me trouble -- Hornet's Nest. It is a night mission where you have to shoot down a large number of enemy bombers. Unlike other Simulator missions, you will have to drop a LOT of planes, and before they reach a target, which is easier said than done on Simulator. Of course, your wingmen will do most of the heavy lifting for you, but you need to stick with each group of enemy bombers until they are no longer highlighted yellow. Use the D-pad to provide the "target attack" (right) and "regroup" (down) commands religiously, and if at all possible, attack from above or the side (you will get torn up by their rear gunners if you are directly behind them). After you clear the bombers, there is a minor ground attack portion which you can (somewhat) take your time with.

All in all, just be patient. On Simulator, you will not be racking up large kill totals like you can (easily) on Arcade difficulty. Just follow targets, shoot when you can, and let your wingmen do the work.
