I got this on Ryloth Mission #12 - Jedi - Bad Company.

During the Challenge, Destroyers roll down the ramp that's to the left in the back of the "arena". Stand near the ramp and as soon as they roll down, jak them and then send them on their way. Because the arena is a fairly tight area, the Destroyers roll around and bounce off of the walls like a pinball.

Also, the challenge duration is longer than most so there's plenty of opportunities to do this. I got the cheeve done in one go-through of the challenge.

Easily done in the challenge near the end of the level Take It Back. Two Destroyers will spawn, one on the left and right. Just Jak one and then turn it on the battledroids following from behind or the large group of droids massing to the front. Easy.
