You can get mangos in essentially two ways. The first is by finishing a race - depending on what position you get rewards you with a certain amount of mangos. Get first and you'll receive the largest amount. The second way is to collect the mangos during the race - these are just floating above the path and can be collected as you proceed. In the process of completing all the other achievements this one should come relatively naturally, and after only completing around half of the achievements I unlocked it. Cheers!
