There is no way to not get this while playing the game as it's a important part of defeating certain opponents. However just so that it's clear this is when you dodge an attack at the last second. Many opponents will have something flash(like their weapon) when you should be dodging to get witch time. Time will slow down and there will be some extra butt kicking in your opponents near future :-)
