First off, you get the parachutes from Leonardo once you destroy all his war machines. The Machine Gun one is story related but the other 3 show up as a black L on the map after you destroy the Machine Gun.

I suggest doing the jump during DNA Sequence 8 in the second memory. When you start this memory, you will already be near the top of the Castel Sant'Angelo. You need to jump off the top of the pole that is a bit higher to your left (which also has a Borgia Flag on top). Then just jump off the pole and press X to release the parachute. You should get the achievement right after you start floating. Then just angle yourself back towards the castle to continue with the Memory.
