On this one the trick is to kill the animals, but do not pick up the meat. If you pick up the required amount of meat the mini-game ends, so don't pick up the meat to let the game keep going. The deer and small animals aren't the problem, the bears and buffalos are a bit on the rare side, so take advantage of the timer and just slaughter everything that comes on screen.
