This achievement is indeed fixed by the recent Puzzle Quest 2 Marketplace Update (4/27/2011). I used the same strategy that's listed over in the Xbox 360 Puzzle Quest 2 solution.
I created a new sorcerer character (they have the lowest starting hit points) and then kept replaying Quick Battles and selecting Rats. Took about 20-30 minutes of retrying but I finally got it. It happened on the level that appears with the bottom right and left corners holding +5 Skulls and the AI strung together three turns with 4-in-a-rows to kill me.
If you try and the computer doesn't kill you right off the bat, just hit the back button, quit to the main menu, and repeat.
