My general hints and tips are: On the dionsaur campaign the first 3 level's should be a cake walk. When the other dinosaur is introduced some people struggle. One advantage you have is when you are a dinosaur if you press A you sprint forward a bit so follow the other dinosaur and when he's near a truck use it to get the truck before he does. Just keep repeating it and you'll find that you've got all the truck's while they've got none.
On the Delivery Truck campaign you have the boost. Only Use It when a dinosaur is about to get you or you want to get the doritos before the other truck. On the truck campaign it is only level 4 and 6 where there is another truck. This is alot easier than the dinosaur campaign as you don't have to deliver that much.
