We have considered your argument and come to the conclusion that only the achievement regarding the warp stones is really to be considered Collectible.
The other achievements require you to meet a certain, usually unique, condition which is similar to fulfilling a simple quest. They are not really "found" but "earned". As for items and monsters, while you need to fill a list, you can encounter most of them in multiple locations. While some may be unique, most aren't.
