I notice in the general stores you can buy different horses, i was wondering instead of paying crazy amounts for the fast ones can you go out and lasso them instead ? if so how do you know which is better to go for ?

EDIT: i am also having a problem with initiating the five finger fillet game, when i go to the icon on teh map there is no option to start the game , have i to unlock something ? |

The 3 fastest horses have to be lassoed before you can buy the deeds for them. The deeds call you a new horse if you want to change breeds or if yours dies and are reusable so you don't have to worry about having to rebuy them.
One of the fastest horses is given to you from the story, one you have to lasso in Mexico, and one you lasso up near Blackwater.
For 5 finger filet, you should just have to approach the table where a bunch of guys are sitting. If they're not there, leave the area to reset them and come back later. |
