When you are given the choice between fighting Vader or The Emperor, choose The Emperor, defeat him and the achievement is yours.

A video walkthrough for the emperor:
Instantmash Thought it was worth pointing out that if you had no intention of playing this game more than once but wanted both the dark side and light side achievements then save when your on the bridge, do one scenario, ever vader or the emperor, once you complete that scenario and the achievement pops up during the cinematic, press guide to exit to dashboard then go back to continue game and make the opposite choice to before, complete game and your second achievement will pop up
