Change the AI difficulty down to the Easiest or whichever setting you are comfortable on
Go into "Championship"
Make sure Practice is on.
Just put in a good lap. On easiest setting you should be well clear of everyone
The achievement popped for me at the end of Practice

Thanks to XxLoCaRooKIExX for pointing out you can quit after the first lap and the achievement will pop
