After much frusration with Copperstown/Pitt i did the following:
Enter the edit rosters and choose the Yankees. hit (Y) to cycle to the batters/fielders only. Now ignoring anyone listed as: A, AA, AAA select any player that is MLB and edit them as follows:
Average- 100% maxed out
Power - 90-95%
HR- 100% maxed out
this will ensure that the players are obtaining maximum Home Runnage!!!
Now LT back to Minnesota and Edit your outfield particularly Tori Hunter to 100% in Range, Glove, Jump/Dive, Speed, and Acceleration. This will assist your outfield from getting deep to the wall. Also choose a couple starting pitchers (I didnt pay attention to who was the starter for Minnesota) and set their stamina to 100%, and fastball movement to 0 this will ensure a "down the middle" pitch 95% of the time.
Now; SAVE YOUR ROSTER! it will prompt for a new save file, make sure you do this as I didnt forgot to edit the outfield and had to turn of the box only to have to do it all again!!!
When you start a play now set the teams to Yankess (away) and Twins (home) Play as the Twins. This field is short and has a short very climbable wall.
Before EACH batter hit LB scroll down to outfield and push right twice to set them deep!!! Now pitch fastballs over the middle and wait. Once you get a HR hit LT to the corresponding OF and sprint to the tip of the arrow on the wall. When prompted click down the (RS) and push it up to climb the wall and rob the Homer. IF YOU ARE AT THE ARROW TIP AND DO NOT GET PROMPTED THE HIT (RS), THE BALL IS TOO HIGH IS GOING INTO THE HIGHER SEATS!!!!! CLICK RS ALL YOU WANT YOUR NOT GONNA SNAG IT!!!
I got this second inning 17-0. It was on my first chance that game with the option to click (RS). Like I said if not prompted, the ball is naturally too high, hence the 90-95% power you want HR's not out of the park "dingers"
Edit- I would like to thank my friend Nuckinn for pointing me in the right direction and encouraging me to post this guide here
