Start your Champion mode on amateur. This fight will begin with you re braking your right hand in the ring before the fight starts. I found that this guy is impossible to knockout (not knockdown) and that it will always go to decision, so just continuously pummel your opponent with your left only, as you will lose drastic health when you use your right hand. Eventually they will give you the win.
