You should get this while going for at least the DeAngelo Hall and David Bowens awards. I also went for the Leon Washington and DeSean Jackson awards because 5 minute quarters gave me enough time and it's essentially the same setup.
Edit a team's starting cornerbacks (2 or 3) and safeties (1 of each) to 99 stats: speed, acceleration, awareness, catching, play recognition, zone coverage, man coverage.
Create a team, and under Edit Team Data change the team type to fantasy draft. Sort players by speed (lowest at top) and fill out each position. When you have the minimum for each position, fill the rest of team with kickers.
Go to Player Skill sliders and change Reaction Time and Interceptions to 100. Change Pass Rushing to 0, because this will give the opposing QB all the time he needs to throw an interception. Go into CPU Skill and change Pass Blocking to 100, QB accuracy to 33 and WR catching to 0.
Give the ball to the CPU somewhere between your 10 and 15 yard lines. The easiest way I found to do this was to get the ball near my 20 and kick a field goal. When a field goal is missed and not returned it is given to the other team at the spot of the kick, calling a field goal on your 20 yard line will place the other team at your 13. Call a nickel defense and wait for an interception in the end zone, the speed difference makes it easy enough to return it for a TD.
