It's not hard to achieve this but if you are still having trouble then use the easiest track to get this which is "Far Far Away". There is a big long turn just before the finish line. While on the 3rd lap make sure to powerslide through it by holding the A button and the direction. When the corner ends, release the A button and you should have plenty of boost to make it to the finish line.
