Unfortunately, I was not able to pull off the Infinity Gem Counter (MSH) or the Variable Counter (MvC) routinely. More often than not, either my timing would be off or I would accidentally execute a different move. While it is possible to do these 25 times as described in the other solutions, the easiest method BY FAR is the Infinity Counter.

In Marvel Super Heroes, go into Settings. Change the Difficulty to 1, Damage to 1, and Rounds to 3. Start Arcade mode and select a character. Personally, I prefer the Juggernaut (and he also provides your opponent with the largest surface area to hit). Once the round starts, build your meter. You can attempt to do the Infinity Gem Counter (Quarter Circle Back + 2 Punches (though the 3 Punch button works just as well) while your opponent is attacking during your block) to try and make the most of your opportunities.

Once you have at least 1 bar, while your opponent is attacking (melee or projectile) during your block, roll the stick a Quarter Circle Down (Back, Down-Back, Down) + Punch. If pulled off correctly, you will Infinity Counter. Your character will flash and attack and the words "Infinity Counter" will display on screen. When trying to Gem Counter, I often wondered if I was successful. With this technique, the game gives you clear indication of your success. Because this maneuver only requires ONE Punch button, it will only activate and use the meter if you do it correctly. This is good for those of use who are playing on pads and don't have perfect input timing. It allows for mistakes.

Using this method, I was able to systematically finish this achievement. It might not be as quick as the other two methods listed, but it is reliable.
