First off, there are 5 missions total that you can get. They are:
King Arthur
Sir Lancelot
Sir Kay
Sir Percival
Sir Gawain
They are all timed missions.
I'll explain all 5 so you can try for whatever you get.
It's possible to change what mission you are given, but it is very difficult. If you spin the round table after lighting the TALE the mission can change.

BTW the easiest way for me to hit the E in TALE was to use the RIGHT flipper, not the left. Capture the ball, let go and then hit the flipper right away. Hopefully, if you are lucky, the ball will ricochet off the Excalibur ramp and hit the E. This is definitely not an exact science. It's more like total luck. It's also possible to hit the ball from the upper left flipper, but it's hard to get up to that one to try for a shot, that's why I started using the lower right instead.
Anyway on to the missions.
All missions are taken from the official Zen Studios guide that you can find here:

King Arthur *Timed*
To complete this Mission you must perform a combo of
10 shots up the Excalibur Ramp. A combo means hitting the ramp twice in a row in quick succession.
This Mission is timed, but when you perform a combo the timer will stall. But if you fail to hit the ramp in time to
perform or keep the combo going the timer will instead restart. Thus you will have to begin again.
Don’t fret as any combo you do will be counted, it’s not a continuous combo of 10 so take it easy.
Sir Lancelot *Timed*
To complete this Mission you must find Guinevere to rescue her from a Prison Cell before the timer runs out. The Dot Matrix plays a very important part if you wish to complete this Mission as it will display 3 locked Doors
& one of them contains Guinevere which you must rescue.
To know which of the 3 Doors is holding a Damsel just look for the one with the biggest lock on it.
Now each of the Doors is represented by a Ramp or Orbit. Orbit means that the ball must go all the way around.
The left door is represented by the left orbit, blinking Green.
The middle is the Excalibur ramp, also blinking.
The right door is the Right orbit blinking blue.
You will get points for hitting any door, but you must unlock the right door to continue.
This is timed, meaning if you don't hit the ramp in time you fail the mission.
There is 30 seconds to start. Every time you hit the correct ramp you get an additional 30 seconds. So if you hit the correct ramp with 15 seconds left, the next one start counting down from 45 and so forth.
You must hit 6 correctly before the timer runs out to get this.
It should be noted that the guide posted says the wrong ramps. The ones I post here are correct. The guide is right 99% or the time so far that I found, but hot here.

Sir Kay *Timed*
You must hit the Excalibur ramp 3 times.
However it's not quite that easy. The ramp must be set to the right direction. To check the direction either look at the Dot Matrix or look at the captured ball next to the ramp. If there is a small lit up sword the you must hit the captured ball hard enough to switch sides.
Then a beast appears at the Mordred Ramp. Hit that and then repeat the Excalibur ramp 3 more times again making sure it goes the correct way and this is yours.
Sir Percival - 2 Ball Multiball Mode *Timed*
This one is a total pain, You might want to skip this one. However here's what to do.
The goal is by far the easiest, but its very hard to do.
This a 2 ball multiball. One ball is glowing. You must keep both balls in play or you fail.
You must hit the glowing ball up the hidden ramp. You must do this 3 times. I think it's a 30 second timer, but I'm not 100% positive.
Where is this hidden ramp you say?
It's behind the round table spinner. The round table seems to always interfere with this at least in my experience.
You start out with a 30 second ball save so use it to your advantage. If you can, capture both balls on the left flipper. A quick slap of the flipper should send the ball to the correct hole and should leave the other ball on the flipper. This takes some practice to get it right.
Good luck with this if you get it.

Sir Gawain *Timed*
This one isn't too hard. You need to hit the lit orbit between 10 and 15 times. Whichever ramp is lit with the yellowish/orange icon is the right one. Combos make this quicker so try making combos around the orbits to get this done in less time. Don't let the timer run out.......
