I found this easiest in first 'Go Wild' event of the Crocodile Capture episode.

You must hit the vultures with your hands (paws/feet?!?) either before they land, or very soon after (I think once they land, you have just over a second to hit them before they take some meat). You'll know you've done it right as the word 'Perfect' flashes on screen.

If you see the word 'Good' on screen, that means a vulture has taken some meat, so best to restart.

I stood as close to the Kinect as it would allow to play the game, as that way you have to move a lot less, but even so it took me several tries to get every vulture at 'Perfect'.

I played in two player mode with my daughter and I hit every vulture perfectly, but she missed a few, and we didn't get the achievement, so I tried it solo - but with a competent second player (my daughter is only 4!) this would be easier with two players, as you would each have a much smaller area to cover.
