This is story based an cannot be missed. Minor spoilers ahead...
Defeating George was tricky at first, but once you know what animal powers to use, it becomes easier.
The only way you can die in the fight is if you are knocked off the edge of the pyramid. This happened to me once during the last wave when I was learning what do to, so be careful. Otherwise, you can take what seems like an unlimited amount of attacks, and not get desynchronized. However, if you do get knocked off, there are no checkpoints during the battle, you have to start over from the beginning.
George has two initial attacks.
First, he will surround himself with orbs and send out bolts from his staff. For this attack, use the wolf power to hide from the bolts and traverse the orbs to get close to him and attack. If an orb hits you, you will be revealed, so be careful. Sometimes when you get hit, you can cloak again before he sees you if you're quick enough.
The second attack is a ground shock wave, which you will need to use Eagle for. George will first charge it up and you will see a force field around him. As soon as he lets go and the shock wave starts, press Y to activate Eagle and you will tackle him.
You will have to go through 2 waves each of these attacks until you get to the final part.
The game will then tell you to use the Bear power to take out the corners of the ceiling. George will spawn multiples who will attack you along the way. If you rush it, you can maybe get the first two corners with no trouble. However, during the whole part, you should also use Wolf to navigate. George will shoot bolts at you during this part, as well as continue to spawn more of himself. Use Wolf to avoid his shots as well as his ever increasing army to get from corner to corner, and then use your Bear power.
