I couldn't completely recall each and every individual creature, so I simply referenced the wiki to get the majority of them down. One thing I feel that is worth mentioning is the fact that this achievement transcends your playthroughs. I'm not sure if this limits you to new game +, however that is what I did and shortly in to my playthrough I scanned something on the roof I must have missed before, netting me the achievement. Each of these listed types must be scanned with the genesis (LB + Holding RT). Of course, casual difficulty is suggested however these are obtainable regardless.

Here's the list from what I could gather on the wiki, it includes both bosses and standard enemy types. With the bosses there are some spoilers.

Variations of ooze.

These are the varying types of enemies you run in to on the ship the most. They are the tall grey enemies who come in all sorts of types. The four types of ooze are...

Standard (normal ones that swing and grab at you early on).
Pincer (Oozes with claw arms, studier and more deadly).
Chunk (these ones look like small walking spheres, explode when killed).
Tricorne (Oozes who shoot the projectiles at you).

Next up are the sea creeper enemies. These start to appear later on in the game when you find yourself in areas which have you knee deep in water. You can use the genesis to scan them before they emerge. This is suggested as I believe they disappear after being killed. These appear in the same area as the Ghiozzo, which are more like slender black mutated piranha looking creatures. Both should be scanned.

Fenrir are the wolves that have been infected throughout the game. You can scan these while you're playing as either Chris or the new character "Keith". There are both standard wolves and there is a larger wolf, I suggest scanning them as they are alive as these ones also disappear after death.

Globster are the enemies you face early on in the game on the shore. You should scan all sorts of these enemies to progress, as you can't move on without 100% scanned.

Hunters are the standing alligator looking monsters and they must be scanned before they are defeated. I'm not 100% sure how many variations there are, however I know there are both visible ones and the hunters that go invisible while you play as Keith. These are called the "Farfarello" apparently, though you'll easily mistake them for normal hunters who can merely go invisible.

Later on there is an enemy with a shield you will face while playing as Jill in a decontamination chamber. This is called the scarmiglione. You want to scan it when you see it, and then unload on it's upper half so that part falls off leaving only a walking spine. These are two different scans, so make sure to get them. This enemy does reappear so it's not a one time only thing.

Next up we have some of the boss characters.

First is the Scagdead, this is first encountered when you are looking for the comms officer. You'll know it's him because you will hear him saying something about the Queen Zenobia as you make your way to the door you have to shoot the lock off of to release him. There are others on the ship, totaling 4 that you can scan so if you don't get him the first time don't panic.

Next up is another boss you face while playing as Jill and Parker. This boss is called the Draghignazzo. It's the one that is heavily armored and charges at you, it is also immediately after the elevator scene where you are attacked (Same creature, go figure). I scanned it both times just to be safe.

Next is infected Rachael. She's a doozy, as she's either trying to smack you or run away after you retaliate. You can throw a BOW bait bomb to get her to leave you alone long enough to scan her. You run in to her twice, so if you missed her the first time don't worry. You can scan her after defeating her, also keep in mind there is an achievement for defeating her before she reaches the cafeteria the first time around.

Malacoda is the giant tentacle monster at the beginning of chapter 11. I just scanned one of the tentacles so you don't need all four to pop the achievement.

Last but certainly not least is the end boss which is Mutated Norman. He's easy enough to scan early in the fight. Don't wait to scan him however as you won't have the time given the fact his defeat leads directly in to a cutscene.

It is also worth noting that you should scan any and every mass there is. My achievement popped on one of these, so even though they aren't quite "enemies" necessarily they will count toward the achievement. If you need visual guides on what the monsters listed above look like, feel free to refer to the wiki as they have pictures of all if not most of the monsters. If there's anything you feel could be used to improve the solution such as an enemy type I missed, feel free to let me know and I'll update the solution.
